Fruit teas are herbal blends of dried fruit pieces such as apple, pineapple, berries and citrus, often with hibiscus, rosehips or flowers for colour and tartness. Most contain no tea leaves, so they are caffeine-free.
Use 1 to 1.5 teaspoons per 250 ml cup and water at about 96°C. Steep 5 to 7 minutes. Fruit pieces are dense, so a longer steep brings out more flavour without turning bitter.
Cold Brew blends are made to steep directly in cold water. Cold Brew Lemon Refresher, for example, uses 2 to 3 teaspoons per 410 ml of cold water and is ready in 15 to 20 minutes.
Dried fruit holds natural sugars and some moisture, so pieces can clump in a humid kitchen. Keep the bag tightly sealed and away from steam, and simply break up clumps with a spoon.
