Jasmine is a climbing shrub whose small white blossoms have perfumed tea in southern China, especially Fujian, for centuries. In the cup it gives a sweet, heady floral aroma with a soft, honeyed finish that lingers long after each sip. Traditionally the fresh flowers are layered with green or white tea overnight so the leaves soak up their scent, and the dried blossoms also brighten oolong, fruit and herbal blends. Try it iced on a hot afternoon for a fragrant, refreshing glass.
