Bailin Gongfu Black Tea is one of Fujian Province’s 3 famous Gongfu Teas. It is famous for its hand crafted tender young leaf and refreshing taste. Fujian Province is known for its high elevation tea gardens that are shrouded in cool mist and clean air that produces some of the world’s finest tea.

Gongfu (or “congou”) tea means that it was hand crafted in the Mt. Taimu area; the tender leaves were twisted into thin tight strips without being broken. Bailin Gongfu’s leaves are a mix of rich, deep black and gold flecked color, of delicate unbroken tippy pointed slender needles. The dry leaf has a sweet burnt-caramel aroma.

Preparation:
Use 1 tsp of tea per 8oz/200ml of water. Heat water to 205F/95C and steep for 2-3 minutes.

Quality   
My favourite black tea. Rich, full bodied, slightly smoky on the edge with distinctive notes of rum/caramel, chocolate and spice. I am not an expert in brewing tea but this one seems best brewed in low temperatures. High temperature, imho, kills off the fragrance and taste.
